Dog Meat

Blogging has taken a back seat to life lately. I have been organizing, decorating, painting, and prioritizing. I am sure I will get back into it, but for now, I think my posting will be a little sporadic. So far, I have painted the stone fire place, painted the front door (5 COATS!), new bedding for our bedroom that I have been wanting for two years, rearranged the playroom and have a trash bag of toys to donate, rearranged Scott’s room, organized kids spring/summer clothes, and working on this project (except in boy colors). I will still do my menu plan, since I actually have to do it to help myself be more organized!

Scott has started his first organized sport. Soccer! He has practice on Wednesday nights so I need to start doing something quick and easy on Wednesday nights so we can get out the door. He is still really into meat, the other day he said, “Mom, Katie looks like she has some good meat on her.” Me: “Ummm, we are not going eat Katie.” Scott: “I know. I was just talking about her meat.” Ok.

The BBQ Chicken Pizza last week was awesome! I was so excited, I am not very adventurous in my pizza making so it was a nice change. On a random note… It is supposed to be 80 degrees on Wednesday and Thursday this week!!! That is shorts weather people!

Monday: Eating at Whole Foods after grocery shopping

Tuesday: Breakfast for Dinner, Nate is really into “eggies”, Scott is really into bacon, I am really into pancakes

Wednesday: Grilled Sandwiches w/ raw veggies and dip

Thursday: BBQ Pork Sandwiches with sweet potato fries (since the oven will be on any)

Friday: Homemade Pizza Night- Pesto, Feta and Tomato

Saturday: Out

Sunday: Grilled Fish with fresh asparagus


Smelly Yoga

Two weird/embarrassing things happened to me today.

One: I think my yoga teacher passed gas in my space. You know how when you go to a class you pick your spot. Well, I always pick towards the back and on the side so I won’t be in front and so I can sneak out before final relaxation. Halfway through the class, when we turned sideways on our mats, she decided to move the “front”of the class to me. Awesome. So she was literally standing right beside me, then she decides to stop doing actual yoga and lead by words so really, I was leading the class. Double Awesome. THEN, she stands right in front of me, says something in yoga speak and walks off. Two seconds later a horrendous odor wafts to my nose. It had to be her. It just had to be. Unfortunately, that is what everyone else was thinking about me.

Two: When I shop for my kids, I way over buy and then I take back. I (along with half of America) had a 30% off coupon for Thurs-Sunday at the Gap and Old Navy, so I decided to do some summer clothes shopping. I literally bought everything I thought might possibly work, then I came home, looked through clothes, re evaluated and start my huge take back pile. After yoga, I went by Old Navy and Gap to do my take backs. At Gap, the manager rolled her eyes and told me, “Are you returning EVERYTHING on this receipt?” Me: “Um, no.” Her: “Returns like this just kill our numbers.” Me: “OK.” THEN a pair of shorts I was returning was no where to be found on the receipt. The other Gap hadn’t charged me for the shorts. So the manager finishes the return and then hands the shorts back to me with my receipt. I hand them back to her, thinking, she forgot I didn’t pay for these. She hands them back to me and says, “We can’t take these, you will have to give them back to the other Gap.” WHAT?! So now I have a free pair of accidentally stolen shorts in my house that I have to somehow remember to take to the other Gap and explain.

I am having a hard time menu planning this week. The weather is throwing me off! I feel like I should be planning summery foods but warm food is still all I can think of. I need to come up with some more sandwich/salad dinners.

The tilapia from last week didn’t end up happening. I pulled the frozen tilapia out of the freezer to defrost and it was rough looking, so I had to throw it out. The Crockpot Teriyaki Chicken got a thumbs up from the boys. I made it on a night I wasn’t home, because sweet saucy stuff isn’t my style.

Since there will still be snow on the ground tomorrow, I am starting the week with soup.

Monday: Taco Soup

Tuesday: Broiled Tilapia Parmesan with rice and salad

Wednesday: Happy Birthday Mom! We celebrated when Ev was in town, so maybe we will take her out for a birthday dinner!

Thursday: Veggie Omelets and hash browns

Friday: BBQ Chicken Pizza with Salad (trying to recreate one of Mikes faves)

Saturday: Meatball Sandwiches (pre made meatballs from WF) with veggies

Sunday: leftovers

Have a wonderful week! I will be watching the snow melt, going to my FIRST parent teacher conference and celebrating my mom’s bday!

Katie Too

I feel like I have been on a life hiatus. Evie came in town last week somewhat last minute and was here Monday-Friday. It was, of course, so wonderful to see her and it, of course, flew by.

PS Thanks for feeding us all week Mom!

BUT before she got here… Look what I did!!!!

My first crafty project! The Pom Pom flowers turned out pretty cute. I think I made the poms a little big or maybe the sticks were a little to small, either way, they are a little out of proportion, but pretty cute! Next up embroidery….

THEN we took a 36 hr trip to KC to go to one of my very best friends baby shower and stayed at Great Wolf Lodge with the family of another best friend. At the shower we went around and introduced our selves, I got to say, that Bethany had been my friend for 18 years. First of all, I am old. Second of all, who has the same best friend for EIGHTEEN YEARS?! I was also teary eyed because this pregnancy has had it’s ups and downs and to see her healthy and happy brings joy to my heart. I got teary eyed because for the last eighteen years we have been by each others sides for the big events of life and this was one of the many (and her Kansas City friends are wonderful!). Then I got teary eyed after we got home from the trip thinking about another wonderful friend that has been dear to my heart for 11 years. Lifeguarding at Southern Hills in our classy (and by classy, I mean really two shades of shiny blue with a mesh strip between the boobs) Miss Jackson’s swim suits…fast forward eleven years…. Hanging out at Great Wolf with our husbands and a total of 5 kids in a swim suits from the Target sales rack. My how life changes…

We got back in town and 1 1/2 hour later guess who came to live with us?!?!

Only the cutest little boxer baby ever! Katie. Oh sweet Katie Too. She is a gem. She is four years old, loves the kids, has had no accidents and doesn’t get on furniture. We love her. She won’t even eat treats of the kids hands, she waits for them to set the treat down and the gobbles it up. We are all obsessed and she even has Mike baby talkin’ to her! We adopted her from Tulsa Boxer Rescue, if you are looking for a new dog go to them! We researched breeds and boxers are supposed to be the best with kids, shed the least, and be all around wonderful. They are very honest about the dogs personalities and truly want to get your family matched with the perfect dog. More pictures to come!

Well… I actually missed cooking last week. I know! I don’t even know myself! I think I am getting more homemakery as the years go by. I started out married life never cooking or cooking really bad burnt stuff (Mike, remember the fried eggplant?!) and having the nickname Hurricane. I would like to think I have improved, at least a little! I haven’t made it to the store yet because Katie’s crate didn’t arrive until late this afternoon and for the first time, I was able to look around the pantry and actually put together a decent dinner. I mean a real dinner, not eggs and pancakes which is usually my stand by. Do I sound like I am bragging? WELL I AM! I was pretty proud of myself.

Wednesday: Chimichangas (it isn’t Irish, but it is a different culture… does that count for something?) with salad

Thursday: Crockpot Teriyaki Chicken (I think I am going to serve with noodles instead of rice) and broccoli

Friday: Grill out Burgers and Veggies (I love the weather!)

Saturday: Grilled Bagel Sandwiches (everything bagels, turkey pastrami, guac, cheese and put on the George) with salad

Sunday: Leftovers

Phew… This took me a long time!

Gettin’ Crafty

So I have decided to get a little crafty. My requirements are: projects that don’t take up much room, don’t take to long to complete and don’t require a sewing machine. I don’t know what has brought this on, but I am just going with it. My first project will be this….

It is from the blog Poopscape Projects that I kind of love just because the name is Poopscape but I also love it because of the easy projects. I think I am going to do pink and white pom flowers on sticks. I might move on to the Gold Leaf  Rocks! project next (same site) but here is the real kicker… I have decided to embroider. I might be very very wrong, but it looks kind of easy. I mean, I am sure there are more intense projects, but it seems like something that could be easy to learn and have easy beginner projects. Also, no sewing machine, not a lot of space required, and no mess. I mean, I am almost 30, I should have some sort of homemaker craft going on. I am envisioning, fun sayings with funky colors and designs. I saw a really cute one that said, “You lie like a rug.” yet was embroidered with flowers, it cracked me up. I also say one that simply said, “WTF”, which also cracked me up, mostly because I am really mature. I can see pirate pillows, cute dish towels, and maybe a nice Kleenex box cover (although that might require sewing). Tips? Ideas? Encouragement?

PS I will post some pics next week of my progress. Promise not to laugh. Well, you can laugh, but only nicely.

Totally unrelated, but a friend from high school wrote this on his blog this week and I loved it… “What you do while you’re waiting for your dream determines if that dream will ever come to pass.”

For some reason, I didn’t get to a lot of my recipes this week. It didn’t seem like we ate out any more, I don’t know what happened. OH, I take that back. Nate has been screaming all week. He threw up Tuesday afternoon, only once, but has been in a horrible mood ever since and won’t eat. Most of you know my food obsession when it comes to my skinny minnies, so he actually has eaten breakfast in the morning and a big bowl of ice cream at night for the last two days…. and that is all. Sigh, I don’t really know what to do. I am going to give him one more day before I call the doctor.

Recipe Review: Slow Cooker Chicken Taco Soup- Not good. It got great reviews, but we did not like the flavor. I can’t really explain why, but I will not be making it again. French Dip Sandwiches- Big hit! Very easy and very yummy. The meat was good even on it own, it would make a good dish paired with some veggies and rice.

Monday: Nachos, didn’t get to these last week. I am going to use some of the leftover meat from the French Dip and drain the chicken taco soup and use the beans and chicken. I hate to waste the whole soup! I have no idea if this will be good, but how bad can chips smothered in cheese be?!

Tuesday: Crispy Beef with Broccoli with brown rice

Wednesday: Breakfast Burritos (also carried over from last week… )

Thursday: Pretzel Chicken* with Sweet Potato Fries

Friday: Okay. Trying something new. I LOVE Cosmos in Tulsa and I finally tried their pizza. I was putting it off because it is on a baguette and for some reason baguette and pizza don’t sound so great BUT it was awesome. Plus less work for me in making the dough! I am going to get some fun toppings and let everyone make their own. (if you live in Tulsa and haven’t gone to Cosmo, go. Everything I have ordered there has been great!) Plus a surprise for Mikey, just because I love him.

Saturday: Going to a dinner auction at the school my mom teaches at and our alma mater

Sunday: Spring Fundraiser at Scott’s preschool, they are having activities for the kids, touch a truck and pizza

Two fried items in one week. Let’s all pray I don’t set the house on fire. Seriously.

*Pretzel Chicken

This is a Rachel Ray recipe, I think. Basically, crush pretzels, smoosh chicken around in it, heat a shallow pan of oil and fry. Easy peasy.
